Juju'S Bran Muffins
- 1 Cup flour
- 1.5 Cup bran flakes
- 1 Cup sugar
- 1 Cup raisins
- .5 t baking powder
- .5 t cinnamon
- .5 t baking soda
- .5 t salt
- .75 Cup buttermilk
- .75 Cup vegetable oil
- 2 large eggs
- Combine dry ingredients; mix well
- In separate bowl, beat buttermilk, oil & eggs until frothy
- Make a well in center of dry ingredients, pour liquid mixture and fold into dry ingredients with spatula until combined
- Refrigerate batter for at least 2 hours or overnight
- Pre-heat oven to 400u0b0
- Divide batter evenly into 12-muffin pan
- Place pan in oven and immediately reduce heat to 350u0b0
- Bake for 20-25 minutes
- Let rest for 10 minutes before removing muffins from pan
