Meat Loaf Or Meat Balls And Gravy
- 2 pounds ground pork
- 2 pounds ground beef
- 2 cups soft bread crumbs (dry works too)
- 3 slightly beaten eggs
- 1 16 ounce can crushed or diced tomatoes
- 1 cup finely chopped onion
- 1 tablespoon salt or garlic salt
- 1/4 teaspoon black pepper
- 1/3 cup crisp bacon, crumbled
- 4 strips uncooked bacon
- beef broth or boullion combined with water
- 3-4 tablespoons of flour
- Preheat oven to 350 degrees
- Set aside broth,flour, and cooked and uncooked bacon.
- Mix together all the other remaining ingredients and shape into a loaf on a shallow roasting pan. Lay strips uncooked bacon over loaf. Bake for 1 and a half hours. Drain off drippings and juices. Add broth or boullion and water to make 3 cups.
- Blend flour and just enough water to make a paste. Add to drippings and cook until it is smooth and thickened. Just before serving, add the crumbled bacon to the gravy.
