Microwave Reuben Meat Loaf

  1. Mix first 7 ingredients together, using only 1/4 cup tomato soup. Place in glass baking dish with glass in center. Mix sauerkraut and 1/2 cup shredded swiss cheese. Press into meat center about 1 inch. Cover with wax paper. Microwave on medium-high 18 minutes. Let stand for 5-6 minutes. Combine leftover tomato soup and horseradish. Mix well. Spread over Reuben loaf and cook on medium-high for 6-8 minutes. Place cheese triangles on top. Heat for 2-3 minutes, until cheese melts.
