My Bacon And Cheese Meatballs
- 500-750gr mince
- 1 finely chopped onion
- 1/2 cup fresh breadcrumbs
- 1 egg
- 1/2 cup grated zucchini
- 8 rashers bacon, halved
- 250gr mozzarella cheese
- 1 quantity tomato suace
- TOMATO SAUCE
- 1 onion, finely sliced
- 1 red capsicum, finely sliced
- 1/2 teaspoon oregano
- 425gr. can tomato puree
- chopped parsley
- black pepper, to taste
- Combine mince, onion, breadcrumbs, egg and zucchini - mixing well. Form into balls. Wrap a piece of bacon around and secure with a toothpick.
- Place in shallow baking dish and bake 200C for about 25 mins.
- Remove toothpicks and pour over tomto sauce, top with slices of mozzarellla cheese.
- Return to oven and bake for a further 7-10 mins or until cheese melts.
