Jelly Roll
- 1 cup softasilk cake flour or 3/4 cup gold medal flour
- 1/4 cup cocoa
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 eggs
- 1 cup sugar
- 1/3 cup water
- 1 teaspoon vanilla or almond extract
- 1 cup cream, whipped and sweetened
- 2 bananas, sliced
- Preheat oven to 375 degrees
- Line 15 1/2 by 10 by 1 inch pan with wax paper and grease. Beat eggs 5 minutes, add sugar and beat. On low speed blend in water and vanilla. Gradually add flour baking powder and salt beating just until smooth. Pour into pan spreading to corners. Bake 12 to 15 minutes. Invert on a towel sprinkled with confectioners sugar. Take off paper while hot, roll cake towel. Cool cake towel over it on a wire rack. Unroll cake. Spread cream cheese and banana slices. Leave section on end cake no spread. Reroll and refrigerate
