Naan
- Dry yeast 1.5 tsps
- Warm water 1 cup
- Sugar 1.5 tsps
- All-purpose flour 3 cups
- Salt 1 tsp (or to taste)
- Ghee (AKA Clarified Butter) 5-6 tbsps (you can buy a small tin of this in the Indian store)
- Yogurt (Plain Non-fat) 3 tbsps
- Minced garlic 6 tsps (add more for an intense garlic flavor)
- Minced parsley 3 tsps
- In a small bowl, add the dry yeast and sugar to the warm water and stir till the yeast is dissolved. Cover and leave aside for 10 to 15 minutes or until the mixture begins to froth and fizz. Put this mixture aside.
- In a large bowl, sift together the flour and salt.
- Add the yeast mixture, 3 tbsps of ghee and the yogurt.
- Use your fingers to mix all ingredients into a soft dough.
- Once mixed, lightly flour a clean, flat surface and knead the dough until it is smooth and stretchy.
- Grease a large bowl with a few drops of olive oil and put the dough in it.
- Cover it with plastic wrap and allow to rest for about 90 minutes or until the dough doubles in volume.
- Punch the dough down and knead again for about 10 minutes.
- Divide the dough equally and roll between your hands to form 8-10 round balls.
- Lightly flour the same surface where you kneaded the dough and roll out each ball until you have a nicely shaped circle, 7"-8" in diameter and 1/2" thick.
- Gently pull on the edges of the circle to elongate the naan.
- Preheat your oven to 400.
- Lay a piece of aluminum foil in an oven tray and grease it lightly with a few drops of olive oil.
- Place as many naans as will fit on the tray without touching each other.
- Brush each naan with some ghee and sprinkle a pinch of minced garlic and parsley all over.
- Put the tray into the oven and cook until the naan begins to puff out and get lightly brown. Flip the naans and repeat.
- Remove from oven, cut in halves and serve hot!
- Alternatively, you can also cook the naan on your stovetop on a flat pan for about 3 min on each side (or until puffed and browned).
- To make plain naan, just leave the garlic and parsley out of the recipe.
