Jackie'S Filet Mignon Roast

  1. *Preheat oven to 350 degrees.
  2. *Heat olive oil in lg. pan with lid
  3. add potatoes, shallots, garlic, carrots and saute over med. heat.
  4. *Add thyme and bay leaf.
  5. *Cover, then cook stirring 15 min.
  6. *Season with salt and pepper.
  7. *Add half butter to oven-proof roasting pan.
  8. Brown meat on all sides in high heat.
  9. (I browned over cooktop)
  10. *Let roast cook in oven for 20 min.
  11. *Remove and let rest with foil covering ten minutes more.
  12. *Transfer to carving board.
  13. *Deglaze roasting pan with broth adding the rest of the butter.
  14. *Add the rest of the vegetables to the pan and return all to oven for 5 minutes to heat up.
