Healthier Zuppo Toscana
- 1 lb pastured sausage (or natural sausage)
- 1 sweet potato (I used japanese sweet potatoes) you could use 2 small red potatoes if you'd like ( dice into small cubes for faster cooking time!
- 1 large onion, chopped
- 2 strips of bacon -cooked and crumbled (optional)
- 3 tsp garlic powder
- 2 c kale (I added a little more because I LOVE KALE!!!!!)
- 2 c chicken broth
- 4 C water
- 1 c unsweetened almond milk or you could use a 1/2 c heavy cream
- 1 tb of chili powder
- salt/pepper to taste
- **Optional additions:- We put raw shrimp in our soup tonight- so about 1 cup raw peeled shrimp
- Directions:
- Brown sausage in your soup pot.
- Add chicken broth and water to pot and stir.
- Place onions, potatoes, and garlic in the pot.
- Cook on medium heat until potatoes are done. (if using sweet potatoes, it will take a little longer)
- Add bacon.
- Salt and pepper to taste.
- Simmer for another 10 minutes.
- Turn to low heat.
- Add kale and cream.
- Heat through and serve.
- You can sprinkle a little romano cheese on top for added restaurant effect :)
- you might want to double this recipe because it does NOT last long!!!! :)
