Sweet Potato Curry Samosas
- 100 grams 1 medium onion, coarsely chopped
- 120 grams 1 medium red bell pepper, coarsely chopped
- 680 grams 2 large sweet potatoes - cubed`
- 3 clove Garlic Cloves, chopped
- 1 tablespoon chopped fresh ginger
- 1 1/2 cups Vegetable Broth
- 2 tablespoon Garam Masala
- 1/2 teaspoon Salt
- 1/4 cup fresh basil, chopped
- 1/2 teaspoon Lime zest, grated
- 1 1/2 tablespoons Lime Juice
- 1 tablespoon Chat Masala
- 2 cup Cauliflower
- 2 pinches 2 fresh green chiles, such as jalapenos, seeded and minced (optional)
- 1/2 teaspoon ground cumin
- 4 cups vegetable oil, plus 3 to 4 cups for frying
- 16 sheets Pastry Sheets
- Combine onion, bell pepper, sweet potatoes, garlic, and ginger in a 4-quart slow cooker.
- Combine broth, garam masala, and salt; stir into slow cooker mixture. Cover, and cook on high for 4 hours or low for 8 hours. Stir in basil, zest, and lime juice.
- Finish with Chat Masala
- Fill Pastry Sheet with Curry
- Fry in Deepfryer for 30 seconds - 1minute
