Mint Herb Stuffed Grape Leaves
- 1 cup Long Grain Rice cooked according to package directions
- 1 TB Olive Oil
- 1/4 cup Minced Onions
- 2 TB Unsalted Raw Pine Nuts
- 1 TB Fresh Chopped Mint
- 1 Jar Grape Leafs
- Salt & Pepper to taste
- Let cooked rice cool to room temperature.
- Heat Olive Oil in a small skillet, add minced onions and cook for 2 minutes or until outsides become opaque and center is still white.
- Add Pine Nuts to the onions and cook until onions are completely opaque.
- Take rice, onions, pine nuts, chopped mint and mix. Add a little salt and pepper to taste.
- Remove Grape Leaves from jar and pat dry.
- Take a heaping tablespoon of rice mix and place on the center of a Grape Leaf. Fold (as you would a burrito) the Left and Right side toward the Center. Take the end closest to you and roll up and you're done!
