S'More Cookies
- 1 3/4 cups all purpose flour
- 2/3 cup powdered sugar sifted with
- 1/3 cup unsweetened baking cocoa
- 2 1/4 teaspoon baking powder
- 2/3 cup semi-sweet chocolate chips
- 1/3 cup semi-sweet miniature chocolate chips
- 5 teaspoons Lighter Bake (fruit puree - found in dried fruit section)
- 1 cup packed light brown sugar
- 2 tablespoons light corn syrup (may be omitted)
- 1 tablespoon water
- 2 1/2 teaspoons vanilla extract
- 3 egg whites (1/3 cup plus 1 tablespoon egg substitute)
- 1/2 - 1 cup halved miniature marshmallows
- 1/2 - 1 cup puffed wheat cereal
- Combine flour, powdered sugar, cocoa and baking powder in small bowl.
- Melt 2/3 cup chocolate chips with Lighter Bake, mixing well, and let cool 5 minutes.
- In medium bowl, add brown sugar, corn syrup, water, vanilla and egg to chocolate mixture and stir well.
- Add flour mixture, miniature chocolate chips, marshmallows and puffed wheat to chocolate mixture. Mix until incorporated.
- Drop by tablespoonfuls onto nonstick cookie sheet.
- Bake at 350 degrees for 8-10 minutes.
- Let cool on cookie sheet for approximately 2 minutes after removing from oven.
- Cool completely on wire rack.
- Makes approximately 5 dozen small, chewy cookies.
