Apple-Cheddar Muffins
- 1 3/4 c. all-purpose flour
- 1/2 lb. apples, cored, pared and finely chopped
- 1/2 c. rye flour
- 1/4 c. Cheddar cheese, shredded
- 1/4 c. sugar
- 2 Tbsp. dark raisins
- 2 Tbsp. baking powder
- 1/4 tsp. allspice or cinnamon
- 1/2 c. skim milk
- 1/3 c. plus 2 tsp. margarine
- 1/4 c. egg substitute
- Preheat oven to 375u0b0.
- Combine first 9 ingredients in a medium mixing bowl.
- Stir to combine and set aside.
- In blender, combine remaining ingredients and process until smooth.
- Pour into dry ingredients and stir until moistened (do not beat or overmix). Prepare muffin pan.
- Fill each cup with an equal amount of batter (each will be about 3/4 full).
- Bake in middle of center oven rack for 20 minutes.
- Cool and serve.
- Great for breakfast or as part of a light lunch.
- Makes 12 servings.
