Fattoush
- 3 tablespoons fresh lemon juice
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper
- 4 medium tomatoes (about 11/4 pounds), cut into 1/2-inch pieces
- 3 green onions, trimmed and chopped
- 1 medium cucumber (8 ounces), peeled, seeded, and cut into 1/2-inch pieces
- 1 cup loosely packed fresh parsley leaves
- 1/2 cup loosely packed fresh mint leaves, chopped
- 4 (6-inch) pitas, each split horizontally in half
- 1 small head romaine lettuce (about 1 pound), coarsely chopped
- 1. In large salad bowl, with wire whisk or fork, mix lemon juice, oil, salt, and pepper. Add tomatoes, green onions, cucumber, parsley, and mint; toss to coat. Let tomato mixture stand 15 minutes to allow flavors to blend.
- 2. Meanwhile, toast pitas; cool. Break pitas into 1-inch pieces.
- 3. Just before serving, toss lettuce and pitas with tomato mixture.
