Thyme Galette With Red Onion, Gorgonzola And Rosemary
- Dough:
- 1/3 cup flour
- 5 tbsp frozen butter, diced
- 1 egg
- 2-3 tablespoons water
- 1/2 teaspoon dried thyme
- pinch of salt and pepper
- Filling:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 red onions, chopped
- 1 teaspoon sugar
- 1 teaspoon salt
- 3.5 oz gorgonzola or goat cheese
- 2 stalks of fresh rosemary
- Drop dough ingredients to food processor, chop, take out and make a ball. Wrap in foil and put in the fridge for 1 hour.
- Heat the oil in a frying pan with butter on it, drop in the onion, salt and sugar and fry over medium heat for about 15 minutes, until lightly browned. Set aside to cool.
- Preheat the oven to 350 C. Take out the dough from the refrigerator, roll out until the thickness is about 0.5 cm, try to create a circle. At the center place the fried onions, leaving the edge clear approximately 3 cm. Lay cheese on top of the onions, and on top of that put your rosemary. Fold sides of the dough to the center, covering the filling slightly. Bake about 20-25 minutes, until the edges of the dough browned. Once removed, remove baked rosemary sprigs. Enjoy your meal!
