Mary Kelly'S Turkey Meatloaf
- For Meatloaf:
- 2 tbs butter or margarine
- 1 cup chopped onion
- 1 clove garlic minced
- 1 1/4 lbs ground turkey
- 1/2 cup bread crumbs
- 1 large egg
- 1/4 cup catsup
- 2 tbs Worcestershire sauce
- 3/4 tsp salt
- 1/2 tsp pepper
- some thyme
- capers
- for Piquant Sauce
- 3 tbs brown sugar
- 1/4 cup catsup
- 1/4 tsp nutmeg
- 1 tsp dry mustard
- Preheat oven to 350 degrees. Melt butter in a small skillet over medium-high heat. Add onion and garlic, cook 5 mins, stirring occasionally. Transfer to bowl, cool 5 mins. Add turkey, bread crumbs, egg, catsup, Worcestershire sauce, salt, pepper, capers.
- Pack into 8x4 in loaf pan. Spread with Piquant Sauce.
- Bake 50-55 minutes or until no longer pink in center (center 165 degrees). Let stand 5 mins.
