Tabouli
- 3/4 cup boiling water
- 1/2 cup cracked wheat or fine bulgur
- 1/2 cup minced parsley
- 1/2 cup finely chopped green onion
- 1 tomato, diced
- 2 radishes, halved and sliced thin
- 1 can black olives, chopped
- 1 - 15 oz can great northern beans, drained and rinsed
- I small package pine nuts, toasted
- 3 tablespoons olive oil
- 2 tablespoons lemon juice, or to taste
- 1 tsp. sea salt, or to taste
- Pepper to taste
- Pinch allspice
- 1 or 2 tsp red wine vinegar or to taste
- *optional - add crumbles of feta cheese and quarters of sliced cucumbers.
- Pour boiling water over the cracked wheat, cover, and let stand about 20 minutes until wheat is tender and water is absorbed. Add the chopped vegetables and toss to mix. Combine oil , lemon juice, salt, pepper, vinegar and allspice. Add to wheat mixture and mix well. Chill. Serve and enjoy.
- Can be eaten as a salad with shredded lettuce and a touch of ranch or as a pita filler - again with lettuce and a touch of ranch dressing or without.
