Refrigerator Bran Muffins

  1. Pour boiling water over raisins and let cool.
  2. (Add soda.) Cream shortening and sugar. Sift flour (save 1/4 cup to dredge nuts).
  3. Add salt and cereal to flour.
  4. Beat eggs and add milk. Add sugar and shortening mixture to milk and egg mixture.
  5. Add water and raisins.
  6. Add dry ingredients and blend until moistened. Fold in nuts.
  7. Place in a tightly covered container. Store in refrigerator.
  8. This makes 4-quarts.
  9. Batch will keep 6 weeks. Bake at 375u0b0 for 20 to 25 minutes.
