Refrigerator Bran Muffins
- 2 c. boiling water
- 2 c. sugar
- 5 1/2 c. sifted flour
- 4 c. All-Bran cereal
- 2 c. 40% Bran Flakes
- 5 tsp. soda
- 4 eggs
- 1 tsp. salt
- 1 c. shortening
- 1 qt. buttermilk
- 1/4 to 1 c. nuts
- 2 c. seedless raisins
- Pour boiling water over raisins and let cool.
- (Add soda.) Cream shortening and sugar. Sift flour (save 1/4 cup to dredge nuts).
- Add salt and cereal to flour.
- Beat eggs and add milk. Add sugar and shortening mixture to milk and egg mixture.
- Add water and raisins.
- Add dry ingredients and blend until moistened. Fold in nuts.
- Place in a tightly covered container. Store in refrigerator.
- This makes 4-quarts.
- Batch will keep 6 weeks. Bake at 375u0b0 for 20 to 25 minutes.
