Broccoli & Mushroom Casserol
- 6 cups broccoli florets & stems
- 12 oz. mushrooms
- 1 pkg. ramen noodles, crumbled
- and seasoning packet
- 1/2 cup yogurt
- 1/2 cup mayo
- 2 eggs
- 1 1/4 cup shredded cheddar
- 1/3 cup blue cheese dressing
- 1/2 tsp salt
- 1 1/2 tsp pepper
- Par boil broccoli with salt, remove to ice bath.
- Saute mushrooms in butter, turn off heat and add broccoli, mayo, yogurt,dressing, eggs, ramen, seasoning and 1/2 the cheese.
- Stir and put into small casserol dish,sprayed with nonstick oil.Pack into place with bottom of smaller baking dish.
- Top with pepper and remaining cheese.
- Bake for 45 minutes with lid on at 350 degrees.
- Remove lid and cook for 5 minutes more, cool for 30 minutes before serving
