Spicy Veggie Eggroll Meals
- 1 package of large eggroll wraps
- 1/2 natural vegetable oil
- ( i dont use olive for this, it cooks better in veg oil)
- 1/2 cup chopped mushrooms
- 1 package sprouts
- 1 package now peas
- 1 pakg baby carrots
- 1 package fresh spinach( or fav lettuce leaves)
- 1 package of imitation CRAB OR LOBSTER
- Optional Cream Cheese chunks,
- or peanut butter chunk in the wrap
- Add a 1/2 tsp ground ginger spice
- 1/2 tsp chinese 5 spice
- Chopp all ingrediants lengthwise so they look like they are cut like tooth picks
- the chopping part is fun !
- WARNING:
- Heat oil slowly in large, deep frying pan..you want a little swimming pool, but not deep,watch it carefully, it heats up and splatters!!medium heat to low to cook
- USE TONGS AND STAY BACK FROM PAN WHEN INSERTING EGGROLLS!
- Take wrap and place some of each of your veggies and seafood into a wrap lengthwise, you can make this chunky, turn the ends inside and wrap over the longer sides. Wet your finger on the edges with water to seal the wrap closed,
- Lower slowly into the hot oil with a tong, EXPECT IT MAY SPLATTER,keep back a bit,
- do this to each the wraps you make,
- Watch them, they brown VERY FAST And need to be turned,
- Cooking time is less than 3 minutes,
- Keep a large plate or cookie sheet with paper towel ready to receive them to drain
- Serve with your favorite soy sauce or sweet n sour sauce
- YUM..
- Homemade Sweet n sour sauce
- 1/2 jar of peach or apricot jam
- 1 tsp tamari or soy sauce
- 1 tsp sugar
- 1 tsp honey
- 1 tsp favorite spicy mustard or ground mustard spice
- Put in a little pot, medium heat, let it melt together, whisk.. and ready to dip!
