Raspberry White Chocolate Cookies
- 1 3/4c flour
- 3/4t baking powder
- 1/2t baking soda
- 1/2t salt
- 3/4c (1 1/2 sticks) butter, softened
- 1/3c granulated sugar
- 1/2c packed brown sugar
- 1/2c raspberry preserves
- 1t vanilla extract
- 1 egg
- 1 1/2c white chocolate chips
- Preheat oven to 365u0b0.
- Mix flour, baking powder, baking soda, and salt in a small bowl.
- In a separate bowl, beat butter, sugar, brown sugar, preserves, and vanilla until creamy. Beat in the egg, then stir in flour mixture.
- Place (big) rounded tablespoons of dough onto cookie sheet and bake 9-11 minutes until the edges are just barely browning. (The centers will still look puffy and moist.) Cool for 4-5 minutes on the cookie sheet while the cookies settle.
- Carefully transfer cookies to cooling racks. (They will still be delicate and soft at this point!) Cool completely.
