Chicken And Pasta With Roasted Vegetables
- Chicken
- 15 oz. can diced tomatoes
- 2 diced zucchini
- 3 diced yellow squash
- 1 diced onion
- 1tbs ground fennel
- 1 tsp thyme
- salt and pepper to taste
- 1 cup chicken broth
- 1/4 cup olive oil
- crumbled feta cheese
- 12 oz. fusilli pasta
- Cut up 3 boneless, skinless, chicken breast and all vegetables into bite- sized pieces.
- In 9 x 13 casserole, pour all ingredients EXCEPT Feta and pasta in casserole, mixing to blend. Cover and bake for 25 minutes at 350 degrees,stirring occasionally until chicken is done. Meanwhile, boil pasta in large pot until al dente- Plan for pasta and chicken to finish at the same time. Serve chicken and vegetables with broth over pasta and top with crumbled Feta Cheese.
