GraceS Tri-Color Cookies
- 6 Sticks Butter or margarine
- 3 t Orange Zest
- 9 t Almond Extract (1 1oz. bottle)
- 6 T Amaretto
- 12 eggs
- 3 C Flour (Sifted)
- 3 C Sugar
- Red, Yellow and Green Food Coloring
- 16 oz. Raspberry Preserves
- 24 oz. Chocolate Chips
- 3/4 t Baking Powder
- Prepare each of three layers (red, yellow and green) as follows:
- Preheat oven to 375.
- Use a cookie sheet greased and floured.
- Beat 4 eggs and 1 cup of sugar well.
- Add 10-15 drops of food coloring (red layer may require more), 1t orange zest, 3t almond extract and 2T amaretto. Mix well.
- Add 1cup of sifted flour and 1/4t of baking powder to mixture, continuing to mix.
- Melt 2 sticks of butter or margarine over low heat and add to mixture.
- Pour into pan, making sure batter is spread evenly.
- Bake at 375 for 10-15 minutes, or until firm.
- Place on wire rack and allow to cool for 15 minutes.
- Transfer each layer to a piece of wax paper. Allow to cool to room temperature.
- Spread half of preserves evenly over layer.
- Place second layer onto first layer and cover with remaining preserves.
- (Layers should be ordered, top to bottom, Red, Yellow, Green - to represent the Italian flag, I know... the Italian flag is red, WHITE and green, but work with me here... it's a cookie!)
- Place third layer on top and slice entire deal into 1" wide strips.
- Melt chocolate in a double boiler.
- Strip by strip, cover top and two sides with melted chocolate and slice into individual cookies.
- Set aside for several hours, until chocolate fully hardens.
