Cuban/Puerto Rican/Latin Salad/Side Dish
- 2 cans Garbanzano Beans (also called Chick Pea)
- 8 links Chorizo Sausage (sliced 1/2 inch thick)
- Extra Virgin Olive Oil
- 3 stalks celery (diced)
- 1 red pepper (diced)
- 3 plum (roma) tomatoes (diced)
- 1 large yellow onion (diced)
- 5 sprigs fresh parsley
- 4 oz. red pimento's (can or jar)
- 1 cup diced sun dried tomato
- salt
- pepper
- 1 sazon packet
- Place olive oil in pan and heat on stove top.
- Add onions, celery and pepper, cook on high until soft.
- Add diced tomatoes, sun dried tomatoes, pimento's and chorizo and let cook all together for about 2 minutes.
- Add the Garbanzano Beans (Chick Peas) within the pan and stir to mix all ingredients together. Cook for an additional minute then
- add the fresh parsley, sazon and stir to mix evenly. Add salt and pepper to taste and cook for another 2 minutes
- and serve.
