Chocolate Zucchini Bread

  1. Grate zucchini onto a cloth and wring out as much moisture as possible. Measure 2 cups and put asideiin a bowl, adding nuts.
  2. Measure flour, baking powder, soda and spices. Set aside.
  3. Melt chocolate. Place sugar, oil and eggsin a bowl and beat at high speed, until lemony. Reduce speed to low, and add chocolate and vanilla.
  4. In cup, measure milk and lemon juice.
  5. Stir in milk and dry ingredients alternately, until no streaks appear.
  6. Add zucchini and nuts. Stir well. Pour into 2 buttered loaf pans. Bake for 40-45 minutes in the centre of a preheated 350F oven.
