Espresso Almond Blondies
- 1 stick (8 tbsp) butter, barely melted
- 1 cup brown sugar
- 2 large eggs
- 2 tbsp espresso powder
- Pinch of salt
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 1 cup all purpose flour
- 3/4 cup semi-sweet chocolate chips
- 1/3 cup sliced almonds
- - Preheat oven to 350 degrees. Grease or butter an 8x8 pan.
- - Whisk together melted butter and brown sugar.
- - Whisk in eggs, espresso powder, pinch of salt, vanilla and almond extracts.
- - Stir in flour, followed by chocolate chips and sliced almonds.
- - Spread batter evenly in 8x8 pan. Optional sprinkle of sliced almonds and chocolate chips on top.
- - Bake for approximately 30 minutes or until center is minimally jiggly. Blondies should be gooey but maintain form after cooling. Makes 9-12 blondies.
