Espresso Almond Blondies

  1. - Preheat oven to 350 degrees. Grease or butter an 8x8 pan.
  2. - Whisk together melted butter and brown sugar.
  3. - Whisk in eggs, espresso powder, pinch of salt, vanilla and almond extracts.
  4. - Stir in flour, followed by chocolate chips and sliced almonds.
  5. - Spread batter evenly in 8x8 pan. Optional sprinkle of sliced almonds and chocolate chips on top.
  6. - Bake for approximately 30 minutes or until center is minimally jiggly. Blondies should be gooey but maintain form after cooling. Makes 9-12 blondies.
