Congo Squares
- 2 3/4 c. sifted all-purpose flour
- 2 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 c. softened butter or margarine
- 3 extra large eggs
- 2 1/3 c. firmly packed brown sugar
- 2 tsp. vanilla
- 2 c. (12 oz. pkg.) semi-sweet chocolate morsels
- 1 1/4 c. coarsely chopped pecans
- Grease 13 x 9 x 2-inch baking dish; preheat oven to 350u0b0.
- Sift flour, baking powder and salt into a bowl.
- Beat butter or margarine together with brown sugar until light and fluffy.
- Add eggs, beating well after each egg.
- Stir in vanilla.
- Beat in reserved flour mixture and when well combined, fold in chocolate bits and nuts.
- Spread batter in prepared dish, smoothing the top. Bake in preheated 350u0b0 oven for 40 to 45 minutes or until top looks dry.
- Let cool completely and cut into squares.
- Makes about 4 dozen squares.
