Mandarin Orange Toss (Christmas Salad)
- 1/3 cup sliced almonds
- 2 tbsp sugar
- 1/2 head lettuce, torn into bite size pieces
- 1 small bunch romaine, torn
- 2 medium stalks celery, thinly sliced
- 2 green onions (with tops) thinly sliced
- 1 11 oz can mandarin oranges, or 4 small clementines (cuties), peeled, pithed and segmented
- Sweet-Sour dressing
- 1/3 cup olive oil
- 3 tbsp sugar
- 3 tbsp champagne or white wine vinegar
- 1 tbsp snipped parsley
- 1/2 tsp salt
- dash of red pepper sauce
- Cook almonds and sugar over low heat, stirring constantly until sugar is melted and almonds are coated. Cool on waxed paper and break apart.
- Toss lettuce, celery, onions and oranges in dressing until well coated. Top with candied almonds.
