Jambalaya
- 1/2 lb. smoked sausage, cut in 1/2-inch slices
- 1/2 lb. sirloin steak, finely chopped
- 1/4 c. oil
- 1/4 c. flour
- 1 c. chopped onion
- 1 c. chopped celery
- 1 tsp. garlic salt
- 1/2 tsp. hot paprika
- 1/4 tsp. red pepper
- 1 bunch green onion, chopped and divided
- 4 cloves garlic, minced
- 1 Tbsp. parsley
- 18 oz. can tomato sauce
- 1/2 tsp. pepper
- 1/2 tsp. thyme
- 6 c. uncooked rice
- Cook sausage and steak in skillet until browned.
- Drain well. Set aside.
- Heat oil in large Dutch oven.
- Add flour and cook over medium heat, stirring constantly until mixture turns copper color (8 minutes).
- Stir in onion, celery, half of green onion, garlic and parsley.
- Cook over medium heat 10 minutes, stirring frequently.
- Add tomato sauce and seasoning.
- Reduce heat and simmer 5 minutes, stirring occasionally.
- Stir meat in and remaining green onions.
- Cook until heated.
- Cook rice according to package directions.
- Add rice and mix well.
