Classic Banana Bread

  1. Preheat oven to 350 degrees.
  2. Combine flour, baking soda, and salt, stirring with a whisk.
  3. In a mixer bowl beat butter and sugar together until blended - about a minute. Add the eggs, one at a time, beating well after each addition. Add banana, yogurt and vanilla; beat until blended.
  4. Add flour mixture; beat at low speed just until moist.
  5. Spoon batter into an 8 1/2x4 1/2" pan coated with cooking spray.
  6. Bake at 350 for 1 hour or until a toothpick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.
