Oatmeal Apple Cookies
- 1 1/2 cups toasted, coarsely ground oatmeal
- 1 cup ground walnuts
- 1/2 cup all-purpose flour
- 1/2 cup vegetable oil
- 2 cups apple sauce (made by mixing 500 gr. (1 pound) apples, 1 cup water and 1/2 cup packed dark brown sugar) - just refrigerate the remainder for another use
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- Prepare the apple sauce by peeling and dicing the apples, adding the water and brown sugar and cooking it 6-7 minutes in a covered bowl in the microwave. If you prefer sweeter cookies you can use more sugar or add honey/molasses.
- In the meantime combine the oatmeal, walnuts, flour, cinnamon and baking powder in a mixing bowl. Add 2 cups of the apple sauce and the vegetable oil and mix well.
- Make cookies by putting 1 teaspoon of the mixture on baking sheet, covered with parchment paper - leave about half an inch between cookies. Bake for 20 minutes at 170 C (325 F) and cool on rack.
