Garlicky Chicken & Artichoke Pizza
- 1 large prepared pizza crust, like Boboli
- 1 large boneless, skinless chicken breast, cut into bite-sized cubes
- 1 tablespoon olive oil
- 8 oz, marinated artichoke hearts, drained and chopped
- 3 cloves garlic, chopped
- 2 green onions, chopped
- 1/2 cup blue cheese salad dressing
- 5 slices provolone cheese
- 1/2 cup shredded Parmesan cheese
- In a large skillet heat oil over medium-high heat. Add chicken and chopped garlic. Cook just until chicken is no longer pink, about 4-5 minutes. Remove from heat.
- To layer pizza: brush or spread blue cheese dressing evenly over pizza crust. Top with the provolone cheese. Evenly distribute the green onions, chicken/garlic mixture and chopped artichoke hearts over the cheese. Finish by sprinkling the shredded Parmesan cheese over all.
- Bake in a preheated 450 degree oven for approximately 15 minutes, or until cheese is bubbly and top ingredients just begin to brown.
- Slice into 6-8 wedges and serve immediately.
