Potato Pea Curry
- 4 Cups peeled white or red boiling potatoes, cut into 1/2 inch cubes.
- 5 Cups water
- 3/4 Tsp of salt
- 4 Large cloves garlic minced
- 4 Tbs. Butter
- I cup half and half
- 1 1/4 Cup of Frozen Petit Peas
- 1/4 Tsp salt to taste
- 2 Tbs. of finely chopped cilantro
- 2 Tbs. curry powder
- 4 Tsp cumin
- 4-5 Dashes of Cayenne Pepper
- To Prepare:
- 1.tlace potatoes in medium saucepan, cover with water and add 3/4 tsp of salt. Bring to boil, then reduce heat and gently boil until potatoes are just tender (10-15 minutes).
- 2.tn a small bowl, stir together garlic, curry powder, cumin and cayenne pepper. Melt butter over medium heat. When butter is melted and froths when stirred, add garlic mixture. Cook for 45 seconds, stirring constantly, then stir in half-half.
- 3.tdd peas and 1/2 tsp of salt. Bring to a simmer, and then reduce heat to low and simmer gently for five minutes. Turn off heat until ready to add potatoes.
- 4.train potatoes Bring sauce back to simmer and add potatoes. Stir gently to thoroughly coat potatoes with sauce and let simmer a few minutes. Sprinkle generously with cilantro and serve over rice.
