Fresh Strawberry Pie

  1. Crust: Mix together crushed cookies, butter, vanilla & sugar. Press into a 9 inch pie pan and bake at 350 until set.
  2. Filling: In a saucepan bring 2 C strawberries and 2 T water to a boil. Cook 2 minutes while mashing berries. Push mixture through a sieve and discard solids. Measure juice and add water to equal 1 cup. Set aside. Combine sugar and cornstarch in saucepan over medium heat. Slowly whisk in reserved strawberry juice and lemon juice. Cook until thickened. Boil 1 minute. Remove from heat and stir in remaining 1 t vanilla. Place 1/3 of strawberries in shell and cover with 1/3 of glaze. Repeat until all glazed and full. Chill 2 hours to set.
