Homemade Oatmeal Cream Pies
- 1 cup butter
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1 tbsp molasses
- 1 tsp vanilla
- 2 eggs
- 1 3/4 cup flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1/4 tsp cinnamon
- 1 1/2 cups quick oats
- 2 tsp hot water
- 1/8 tsp salt
- 1 (7 oz) jar marshmallow fluff
- 1/2 cup vegetable shortening
- 1/3 cup powdered sugar
- 1 tsp vanilla
- Preheat oven to 350.
- Combine flour, salt, baking soda, and cinnamon. Cream butter and sugars. Beat in molasses in vanilla.
- Add flour mixture. Beat until just blended. Add oats.
- Bake 10-12 minutes.
- Dissolve salt in hot water. Set aside and allow to cool. Combine marshmallow fluff, shortening, sugar, and vanilla. Mix until fluffy. Add water, mix well.
- Spread filling on flat side of cookie; make sandwich.
