Lime Chicken Kababs
- 3 large limes, juiced
- 1 jalepeno pepper, finely minced
- 1 C fresh parsley, chopped
- 3 sweet basil leaves, chopped
- 3 TBLS garlic, chopped
- 1 tsp white vinegar
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp cayenne
- 1 tsp say sauce
- 1/2 tsp dry chinese mustard
- 1 C water
- 2 large boneless skinnless chicken breasts, cubed
- 24 grape tomatoes
- 24 small button mushrooms
- 24 small skewers
- Combine all ingredients for the marinade. Dice chicken. Place cubed chicken in a zip closure plastic bag and pour 1/2 of the marinade over meat. Close and refrigerate for 30 mins. Place the vegetables in a second plastic bag and 1/4 marinade over and let set for 30 minutes.
- Slide one piece of chicken, one tomato and mushroom onto each skewer (note: if the skewers are wood; soak in water for 30 minutes prior to using).
- Grill, basting with the remaining ingredients until chicken is fully cooked.
