Fresh Fried Finger Foods
- 2 pounds assorded fresh veggies - (Squash, carrots, green beans, snap peas, bell peppers, potatoes)
- 2 cloves garlic, minced
- 4 tablespoons butter
- 2 drops almond extract
- Fresh ground sea salt - to taste
- Optional Stir Ins: 1/4 cup slivered almonds OR 1/4 cup finely chopped water chestnuts
- Optional Garnish: 1-2 tablespoons of finely chopped fresh chives.
- Wash, peel and pare veggies. Cut larger vegetables into long thin strips, leaving pea pods and green beans whole.
- Mince garlic and place in WOK or very large frying pan (14-16" with high sides). Add butter to the pan and melt over medium high temperature.
- Add almond extract to garlic butter and toss in the vegetables all at once. Increase the heat to high and quick fry. Stir constantly for 8-10 minutes until crisp-tender. Add a light grind of sea salt and serve in large serving dish.
- *Optional - add slivered almonds or finely chopped water chestnuts during the last 2-3 minutes of frying if desired and add a few fresh chopped chives to the top of your dish.
