Vegan Gluten-Free Almond Flax Cookies
- 1 c. Earth Balance vegan spread
- 1 c. brown sugar
- 1 c. sugar in the raw
- 1 tsp gluten free vanilla extract
- 1 c. almond meal
- 2/3 c. rice flour
- 1/2 c. coconut flour
- 1/3 c. gluten free rolled oats
- 1/4 c. whole flax seeds
- 1 tsp baking soda
- 1 tsp baking powder
- Cream together Earth Balance and sugars. Add Vanilla. Combine dry ingredients and mix well. Mix wet and dry ingredients together. Mixture will be quite crumbly resembling graham cracker crumb crust. Refrigerate for 1 hour.
- Preheat oven to 375.
- Form cookie mixture into 1 inch balls by pressing firmly in palm of hand. Place on cookie sheet 2 inches apart and flatten slightly to make cookies approximately 1 1/2 inches in diameter.
- Bake at 375 for 10 minutes and allow to cool completely.
