Nonno'S Stuffing
- 3 whole celery, chopped
- 4 sweet onions, chopped
- 6 pounds chicken livers
- 2 pounds sirloin steak, chopped and well browned
- 3 pound loaf sliced Turano bread,
- 1 bunch parsley, chopped well
- 1 pound grated parmesan
- 1 can diced tomatoes, with chilis preferred
- 2 pounds chestnuts, roasted and peeled
- 4 cups chicken or turkey stock
- Saute celery and onions. Set aside.
- Saute steak. Set aside.
- Chop iver and saute. Add diced tomatoes and combine. Add to food processor and process to desired consistency.
- Tear up Turano bread. Add broth or stock to moisten. Add remaining ingredients that were set aside.
- Add parmesan cheese. Add more stock to moisten to desired consistency.
- Grease baking dish or dishes. Fill with stuffing. Top with more cheese and the sliced almonds.
- Bake at 350 until golden brown.
