Cran-Oatmeal Cream Bars
- 1 pouch Betty Crocker oatmeal cookie mix
- 1/4 tsp ground cinnamon
- 1/2 cup butter or marg, softened
- 1 egg
- 3/4 cup cream cheese
- 3 Tb sugar
- 1/4 tsp vanilla
- 1 egg yolk
- 1 cup dried cranberries
- 1. Heat oven to 350. Line 9 inch square pan with foil, so that foil extends over sides. Spray foil with cooking spray.
- 2. In a large bowl, stir cookie mix, cinnamon, butter, and egg until a soft dough forms. Reserve 1/4 of dough. Press remaining dough in the bottom of the foil-lined pan. Bake 15 min.
- 3. In a small bowl, stir cream cheese, sugar, vanilla, and egg yolk until well blended. Stir in cranberries. Spread over crust only after it has cooled for 10 min. Be gentle or the cookie crust will sink in!
- 4. Take remaining 1/4 dough and sprinkle over cranberry mixture.
- 5. Bake 18-20 min or until top is light brown. Cool 30 min. Cut into bars and refrigerate for 2 hours. Store leftovers in the fridge.
- May add pecans (1/2 cup) to remaining 1/4 of dough before covering cranberry mix.
