Bacon Pineapple Bites
- 1 lb Bacon
- 1 can Pineapple Chunks (large chunks) drained
- 1/2 cup brown sugar
- toothpicks
- 1. Preheat oven to 375. Completely cover a shallow baking pan with foil. Place a cookie cooling wire rack in pan.
- 2. Cut bacon strips in half. Put brown sugar in a shallow bowl.
- 3. Take a half strip of bacon and dredge in the sugar. Put a pineapple chunk on one end, roll up, and secure with a toothpick.
- 4. Place the pineapple bacon bundles on the wire rack.
- 5. Bake for 15 minutes. Turn bites over using a pair of tongs.
- 6. Return to over for at least 10-15 minutes. Bake for up to 30-40 minutes total, until the bacon is brown and crispy. But be careful - the brown sugar will burn if left too long!
- 7. Remove from oven and let cool on rack for 3 minutes. Then remove to platter for serving. The bites will be HOT!! but delicious!!
