Guacamole With Scallion, Pomegranate And Garlic
- 3 Ripe Avocados
- 1 Bunch of Scallions (Minced)
- 1 Fresh Jalapeno (Minced)
- 1/2 Lime
- 4 Large Cloves Garlic (Minced)
- 3 Tablespoons Olive Oil
- 1 Pomegranate
- 1 Teaspoon Salt
- Cut and peel avocados and put into a mixing bowl. Use a masher to crush until the consistency is smooth and most of the chunks are gone.
- Cut bunch of scallions in half, saving the green ends. Mince Garlic, Jalapenos and Scallion ends very finely. Spoon out the seeds from the Pomegranate and separate them from the white guts.
- Squeeze lime half into the mixing bowl. Combine Olive Oil, Garlic, Scallions, Jalapeno, Pomegranate seeds and salt with mixture. Mix with masher until well blended.
- Serve over tacos, quesadillas or with tortilla chips.
