Roast Cherries
- 1/2 vanilla bean, split and seeded
- 3/4 c sugar
- 3/4 muscat de beaumes de Venise
- 1/4 c water
- 4 c cherries bing or brooks
- Cream
- 1 vanilla bean, split and seeded
- 1/2 c mascarpone cheese
- 1 1/2 c heavy cream
- 3 tbs sugar
- Thyme
- Preheat oven to 300 deg
- Combine vanilla, orange, sugar, wine, water in large shallow ovenproof pot; bring to simmer over med heat. When sugar dissolved, add cherries. Place pot in oven and roast until cherries have softened, stirring occasionally, about 45 min.
- Remove and cool.
- Make cream inmed bowl. Stir vanilla and mascarpone cheese. Add remaining cheese and vanilla seeds and sugar. Beat w elec mixer on med speed until stiff peaks form. Place warm cherries in bowl and top w cheese.
