Habanero Chili
- 1 lb Dried kidney beans - I use canned dark red
- Habanero peppers to taste - crushed and dried
- 2 T olive oil
- 2 onions chopped - I use one
- 1 - 6 oz can tomato paste
- 2 lbs chuck steak - I use 2 pounds ground chuck
- 1 clove elephant garlic - I use 2 or 3 regular
- 1 bay leaf
- 1 t oregano
- 1 t marjoram
- 2 - 16 oz cans Italian peeled tomatoes with juice - or 1 - 28 oz can - smash tomatoes
- Cover habanero peppers with warm water & let soak 30 minutes. In a large pan heat oil. Add onions, garlic and meat until brown. Add habanero peppers & soaking liquid, bay leaf, oregano and marjoram. Bring to a simmer before adding tomatoes and beans. Bring to a boil and simmer for 1 1/2 hours.
