Jimmy'S Stuffed Chicken
- 4 lg bone in chicken breasts
- olive oil to coat chicken
- 1 tbsp garlic salt
- 1 tbsp paprika
- 1 tbsp dill weed
- 1 tsp cayenne pepper* spicy optional
- 1 tbsp margerine
- 1/2 loaf of white bread
- 2 cups chicken stock
- 1 medium onion diced
- 3 cloves garlic diced
- 1 tbsp bell seasons
- 1 tsp salt
- 1 tsp pepper
- Pre heat oven 400 F
- take out a baking pan and line it with aluminum foil. spray foil with non stick spray. place thawed chicken in pan lightly coat chicken with olive oil. In a bowl mix garlic salt,dill,cayenne pepper,and paprika then spinkle this mix all over the chicken. Put chicken in the oven let cook for about 20 minutes. In lg skillet put 1 tbsp margerine, diced onion, and garlic. Let the onion and garlic cook on medium high until they turn translucent adding litle bits of chicken broth as they cook to prevent burning. While onion and garlic simmer chop half the loaf of white bread into cubes. Cutting the bread is easiest if you cut into triangles or just tear it all up. Add the bread to the onion and garlic mix and dredge the bread with the remainder of chicken broth about 1 1/2 cups chicken broth. Stir the mix until the bread is completely saturated and is mixed. Turn off heat add the bell seasoning salt and pepper. Mix the stuffing till it is dough like. Add bread if you put too much chicken broth. Take chicken out Generously Spoon Stuffin onto the back part of the chicken where there is no meat and put back into the oven until the chicken is 175 F internal temp. Let chicken sit for 10 minutes. If you do not like onions or garlic you can replace with meats or other vegies. Celery,Mushrooms,egg plant,zuchini be creative. The kitchen is your own world. Serve with wine and a tossed salad or whatever you want!
