Chicken And Mushroom Pasta
- 2 chopped chicken cutlets
- Flour
- 1 tbsp. olive oil
- 1 tbsp. butter
- 1 chopped onion
- 5 cloves chopped garlic
- 2 sliced bell peppers
- Red pepper flakes
- 1 cup white wine
- 1 tbsp cornstarch
- 1 package fresh fettucine
- 1 cup pasta water
- 1 package sliced mushrooms
- Nutmeg
- Parsley
- 1/2 cup skim milk
- Boil pot of water.
- Dredge chicken pieces in flour.
- Heat olive oil 1 minute. Cook chicken pieces 7 minutes and remove.
- Melt butter in pan. Add onion, garlic, peppers, and pepper flakes. Cook 10 minutes.
- Add wine and cornstarch. Boil 1 minute.
- Add chicken and simmer 15 minutes.
- Cook fettucine as per instructions. Remove and add to pan. Stir in milk, pasta water, and sliced mushrooms. Cook 5 minutes. Top with nutmeg and parsley.
