Mango Salsa
- 2 large mangos
- Handful cherry tomatoes seeded and chopped
- 1/2 bunch (about 3/4 C or to taste) snipped cilantro
- 1/2 C red onion roughly chopped
- 1/2-1 jalapeno pepper (or to taste) seeded, cleaned of vein and roughly chopped
- 2 garlic cloves roughly chopped
- 2-3 tbs. extra virgin olive oil
- Juice of 1 lime
- Habanera Sauce or Tabasco to taste
- Kosher salt
- Dice mangos (stand fruit on end and slice down on each side along the pit. Score the flesh in small squares, but do not cut thru the peel. Push the fruit up from under the peel and slice off the fruit into a bowl.)Dice tomatoes and add to bowl
- Snip cilantro into small pieces and add to bowl.
- In food processor add onion, jalapeno and garlic. Process just until minced. Add to bowl.
- Mix gently and squeeze in lime juice
- Add 2-3 dashes hot sauce
- Add olive oil and mix again
- Kosher salt to taste
- Chill.
- Serve with tortilla chips or as garnish over grilled fish.
