Conch Chowder
- 1/2 pkg. thin sliced pepperoni
- 1 lb. conch
- 1/4 lb. popcorn shrimp
- 5 medium potatoes, cubed 1/2 c. okra, sliced
- 5 cloves garlic
- 3 medium onions
- 2 medium bell peppers, chopped
- 2 (16 oz.) cans tomatoes, chopped
- 1 large can tomato paste
- 1 tsp. oregano
- 1 tsp. basil
- 2 Tbsp. fresh parsley, chopped
- salt and pepper to taste
- 2 to 2 1/2 qt. water
- In small amount of olive oil, saute garlic until soft but not brown; remove.
- Combine pepperoni, onions, peppers, tomatoes, tomato paste, oregano, basil, parsley, salt and pepper and water. Simmer 1 hour.
- Use food processor to break up tissue and chop conch into small pieces.
- Add conch, shrimp, potatoes, okra and cook another hour, or until done.
- Do not overcook.
