Almond Fudge Torte
- 1 tsp. instant office powder or granules
- 2 tbsp. hot water
- 4 ounces semisweet chocolate
- melted
- 3 eggs, separated
- 1/2 cup butter
- 3/4 cup sugar
- 2 ozs, almond paste crumbled
- about 1/3 cup
- 1/2 cup all-purpose flour,
- unsifted
- Chocolate Glaze, recipe follows
- Dissolve coffee in hot water. Stir in melted chocolate. Beat egg whites just until stiff moist peaks form.
- In another bowl, beat the butter and sugar together until creamy. Beat in almond paste. Mix in egg yolks, melted chocolate mixture, and flour. Fold in the beaten egg whites about 1/3 at a time, just until blended. Spread into a greased and cocoa dusted 8 in round cake pan. Bake 350 degree's for 30 min. until lightly browned, do not over bake.
- Let cool on rack about 10 min. turn out of pan. Cool thoroughly, then spread glaze over top. Let stand until glaze hardens about 2 hr or 15 min chilled.
- Glaze: Use double boiler, combine 4 ounces of semisweet chocolate and 1 tbsp solid shortening. Sir over barely simmering water just until melted. Remove from heat and cool, stirring occasionally, until cools and thickens.
