Red Pepper And Spinach Pasta
- 1 lb. whole wheat penne pasta
- Feta cheese, crumbled, to taste
- 1 lb baby spinach
- Roasted red peppers
- 1 sweet onion
- Basil
- Olive oil
- 3 cloves of garlic
- Dice onion
- Mince garlic
- Cut roasted red peppers into strips
- Add 1 TB olive oil, onion, and garlic to pan on medium-heat
- Saute until onions are soft
- Add red pepper and heat through
- Add spinach and saute until wilted
- Boil water and add pasta
- Cook for 7 minutes.
- Drain, reserving 1/2 c. of pasta water
- Add pasta and reserved water to pan with onion, spinach, and peppers.
- Cook until heated through
- Add pasta to serving bowl.
- Add crumbled feta to pasta and toss
- Drizzle with olive oil, to taste
