Red Pepper And Spinach Pasta

  1. Dice onion
  2. Mince garlic
  3. Cut roasted red peppers into strips
  4. Add 1 TB olive oil, onion, and garlic to pan on medium-heat
  5. Saute until onions are soft
  6. Add red pepper and heat through
  7. Add spinach and saute until wilted
  8. Boil water and add pasta
  9. Cook for 7 minutes.
  10. Drain, reserving 1/2 c. of pasta water
  11. Add pasta and reserved water to pan with onion, spinach, and peppers.
  12. Cook until heated through
  13. Add pasta to serving bowl.
  14. Add crumbled feta to pasta and toss
  15. Drizzle with olive oil, to taste
