Chocolate Raisin Chewies
- 2/3 c. all-vegetable shortening
- 1 1/2 c. firmly packed light brown sugar
- 1 Tbsp. water
- 1 tsp. vanilla
- 2 eggs
- 1 1/2 c. all-purpose flour
- 1/3 c. unsweetened cocoa powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1 1/2 c. raisins or combination of raisins and chopped walnuts
- Heat oven to 375u0b0.
- Combine shortening, brown sugar, water and vanilla in large bowl.
- Beat at medium speed of electric mixer until well blended.
- Beat in eggs.
- Combine flour, cocoa powder, salt and baking soda. Add to creamed mixture at low speed until just blended.
- Stir in raisins.
- Drop by rounded measuring tablespoonfuls 2 inches apart onto ungreased baking sheet.
- Bake one baking sheet at a time at 375u0b0 for 7 to 9 minutes, or until cookies are set.
- Do not overbake.
- Cookies should be soft and moist.
- Cool on baking sheet 2 minutes.
- Remove to kitchen counter.
